Food and beverage is a speeding train that never stops. Founders and operators know this better than anyone, and somewhere along the line, the gaps start to show. A loss of identity. Infrastructure that never got built. Support that was promised but never delivered.

We have. We've worked the line, the floor, the doubles, the chaos, and every addictively fun, fast-paced, and yes, at times, unglamorous (hello getting splashed in dish pit) moment in between. That's how we fill those gaps. We see projects through from the inside out.

Why Samara?

The name comes from the samara seed — the small, winged helicopters that spiral down from maple trees every spring in Charlotte, NC, carrying everything a new tree needs to land and take root. That image guides everything we do.

Hey, I'm Sarah

I founded Samara Hospitality because operators deserve to have a partner who has worked a Saturday night service (a lot of Saturday night services).

I've spent my career on the floor and in the numbers running restaurants, building the systems that hold them together, and learning firsthand what actually breaks down when things get busy. I hold a Masters in Hospitality Management from Cornell's Nolan School of Hotel Administration, which gave me the frameworks to back up what I'd already learned the hard way.

I started Samara because I kept seeing the same gap: restaurants with great instincts and no system to scale them, or great strategy that never made it past the whiteboard because it wasn't built with actual service operations in mind. I built The Root Work to close that gap so every engagement starts with understanding what's actually there before we grow anything new.
